GRANOLA


Cooking with fresh foods is one of the most important ways we can nourish ourselves! I have fallen in love with this nourishing granola recipe! This is the perfect breakfast for keeping your belly full all  morning. I was having trouble finding a healthy breakfast other than smoothies, oatmeal and avocados that was vegan and gluten free. Then I discovered this NOLA, and it makes the kitchen smell like your baking cookies!


Directions:

  1. Preheat over 325 F
  2. In a large bowl mix the oats flax and nut/seeds together.
  3. In another bowl mix the cinnamon, dash of salt.
  4. In a pan heat oil, honey, & vanilla. 
  5. Pour the cinnamon and salt into the oil and honey pan. 
  6. Whisk the cinnamon and oil all together, and pour it into the large bowl of oats
  7. Stir it all together, make sure oil is all over. 
  8. Pour onto two non stick baking sheet.
  9. Bake for 25 min. I check on them at 15 min, to see if I need to rotate the pan. 
  10. After mix in the dried fruits, and let it all cool. 
  11. Place in a container, eat and share with others!


I enjoy a handful for breakfast in a bowl with plant-based milk, and occasionally add more cinnamon or honeyyyy.  Also, I love to let it sit in the milk for a few minutes, and then add either bananas or blueberries. When it has been soaked in the milk, its easier to digest.



Ingredients:

  • 100% Love
  • 4 cups of organic gluten-free rolled oats 
  • 1.5 cup nuts ( walnuts, crunched almonds, pumpkin seeds)
  • 1 cup of unsweetened organic coconut flakes 
  •  few tablespoons flaxseed
  • cinnamon 
  • 1 cup happiness 
  • dash of salt 
  • 1/3 cup coconut oil
  • 1/4 (honey, agave, maple syrup)
  • 1 teaspoon organic vanilla extract
  • 1/2 cup dried fruit ( cranberries, blueberries)
